Winter Squash and Sun-dried Tomato Pasta
We are smack in the middle of squash season, without question. They are overflowing in the produce departments of every grocery store in town, and if you’re lucky, you still have a few leftover from a late summer harvest. I love winter squash because they keep so well, and can provide a nice reminder of summer, when things weren’t frozen and vegetables came out of the ground, rather than from the supermarket.
